We came across this very easy to make, but also very delicious salad dressing when we were trying out Terra's Kitchen meal subscription service. We loved this dressing and keep coming back to it for many reasons. First, it is dairy free from the start. No modification needed, nothing you are missing, nothing special to buy. Second, it got my husband to say he loved salad. That does not happen in our house for my meat and potatoes guy! And he's not the only one that loves it. I made it for my family a few months ago, and they requested it for Thanksgiving dinner. Third, it is versatile. We have put carrots, cucumbers, tomatoes, feta cheese (for others), croutons, arugula, iceberg lettuce, romaine lettuce, and a few others in salads with this dressing and yet to find something we don't like smothered in it. Fourth, it keeps. I've made a large batch of the dressing and stuck it in the fridge for a week and had it last perfectly fine. Just give it a shake and it's good to go!
Mustard-Lemon Salad Dressing
Ingredients:
2 tablespoons of Olive Oil
2 tablespoons of Dijon Mustard
1 and 1/2 tablespoons of Lemon Juice
1/2 teaspoon of ground black pepper (or more to your taste)
1/2 teaspoon of salt (or more to your taste)
Whisk and enjoy!
